In January, I decided that I know longer wanted to be out of shape and as heavy as I was. I was 40 pounds overweight and turning 49. I felt like a bad example to my girls. I already had a heartbeat that didn't want to keep time in a regular manner and it was really unsettling to me. I wanted to get in shape first and I knew the weight would come off. I also wanted to do this in a healthy manner so I could show my girls how to get in shape, lose weight and be healthy about it. Our Hannah had asked for the workout DVD series - INSANITY ( beachbody product ) and on January 4th it arrived. I took a look at the program and food guide. I decided then and there that I was going to do it...there was something that just clicked and I was determined that I would do it....for me!
My first day of INSANITY was a fitness test....I thought the fitness test was tough, but I was anxious to see what the first day of the actual workout would be like. OMG!!!!! I could not even imagine how hard this workout was gonna be. I am pretty sure a 40 pound overweight, almost 49 year old woman was not the intended target person for this workout, but I made my mind up to do it. I had great results and it has transformed our whole families eating. We have adopted a "Clean" diet and eat less wheat products. Occasionally a certain family with "sneak" some treats into the house that don't fall under the new kitchen order, but that's o.k....still gotta live. After my first 60 days of INSANITY, I lost 15 pounds and over 20 inches. I am in the middle of my second go at INSANITY to try to take off the last pounds. But I am loving the new changes in the kitchen and feel so much better.
Here is a sample of the yummy recipes we have been eating - Let's start with breakfast!
Whole Wheat Blueberry Maple Pancakes
Ingredients
- 1/2 cup whole wheat graham flour (I use Bob's Red Mill)
- 1/3 cup rolled oats
- 1 1/2 tsp baking powder
- 1/4 tsp sea salt
- 2 Tbsp pure maple syrup
- 1 egg
- 1/2-3/4 cup skim milk
- 3 Tbsp olive oil
- 1 tsp pure vanilla extract
- 1/2 cup blueberries (I like fresh, but frozen will do)
Instructions
1. Crack egg in bowl, add vanilla, syrup, oil, and milk (start with 1/2 cup milk at first, add more if mixture appears too thick). Mix well.
2. Add oats, flour, baking powder, salt. Stir until all combined.
3. Fold in blueberries.
4. Use a small ladle to pour mixture into a non-stick pan over medium heat. Flip over when sides begin to brown. Careful to not overcook.
