Somebody on my Facebook posted this recipe so I thought I would try it out. Sounded like a yummy summer recipe. I made the burgers up a day ahead and then cooked them up and there were delish! You wouldn't know you were eating salmon. Lots of flavor. Still couldn't win my youngest daughter over to salmon though. Next time I will toast the buns. I was trying to get them cooked up because we were having an early supper - trying to get girls home from work, to work, and meet people we haven't seen in forever - so the buns didn't toasted. I grabbed my burger as we ran out the door and ate it in the car. In the car or at the table, it was still a good, easy meal!
Sweet Chili Salmon Burgers

- 1 egg
- 1 1/4 pounds finely chopped or ground skinless salmon fillets
- 3/4 cup panko or bread crumbs
- 1/2 cup chopped green onions
- 1/2 cup sweet Thai chili sauce
- 1 teaspoon salt, divided
- Vegetable oil
- 1/2 cup mayonnaise
- 1 1/2 to 2 tablespoons fresh lemon juice, or to taste
- 1 teaspoon minced garlic
- 1/4 teaspoon freshly ground black pepper
- 4 sesame kaiser rolls, split and toasted
- Thinly sliced sweet onion
- Thinly sliced peeled and seeded cucumber
- Mixed spring salad leaves
Beat egg in a large bowl and combine with salmon, panko, onions, sweet chili sauce, and 3/4 tsp of the salt. Lightly coat hands with oil and form mixture into 4 patties. Refrigerate patties until ready to cook. In a small bowl, combine mayonnaise, lemon juice, garlic, pepper and remaining salt. When ready to cook, heat 2 teaspoons oil in a nonstick skillet or grill pan over medium-high heat. Add patties and cook 4-5 minutes per side until done. To assemble burgers, spread sauce on bun bottoms; top with salmon patties, onion slice, cucumber, salad leaves and additional sauce. Add bun tops and serve.
